Prepare the Steak
Thinly slice the ribeye steak against the grain into strips. This helps to ensure tenderness.

Cook the Vegetables
In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced onions and mushrooms and sauté for about 5-7 minutes until they are softened and slightly caramelized. If using fresh peppers, add them in the last 2 minutes of cooking.

Cook the Steak
In the same skillet, push the vegetables to the side and add the remaining tablespoon of olive oil. Increase the heat to medium-high and add the sliced steak. Season with salt and black pepper. Cook for about 3-5 minutes until the steak is browned and cooked to your desired doneness.

Assemble the Cheesesteaks
Split the hoagie rolls open and scoop the cheesy steak and vegetable mixture into each roll. Make sure to include some of the melted cheese and toppings.
