    Prepare the Marinade

    In a bowl, mix minced garlic, olive oil, oregano, cumin, salt, black pepper, and lime juice to create a marinade.

    Marinate the Pork

    Make small incisions all over the pork leg. Rub the marinade thoroughly into the meat, ensuring it gets into the incisions. Place the pork in a large resealable bag or dish, add bay leaves, and refrigerate for at least 12 hours, preferably overnight.

    Preheat the Oven

    Preheat your oven to 325°F (160°C).

    Roast the Pork

    Place the marinated pork leg in a roasting pan. Cover it with aluminum foil and roast in the preheated oven for about 4 hours, or until the internal temperature reaches 190°F (88°C).

    Crisp the Skin

    Remove the foil in the last 30 minutes of cooking to allow the skin to crisp up. You can also broil it for a few minutes at the end if necessary.

    Rest and Serve

    Once done, let the pernil rest for at least 20 minutes before slicing. Serve with your favorite sides.
