Marinating the Pork

    Prepare the Marinade

    In a blender, combine pineapple juice, guajillo chiles, ancho chiles, garlic cloves, white vinegar, cumin, oregano, salt, and black pepper. Blend until smooth.

    Marinate the Pork

    Cut the pork shoulder into chunks and place it in a large bowl. Pour the marinade over the pork, ensuring each piece is well coated. Cover and refrigerate for at least 4 hours, preferably overnight.

Cooking the Pork

    Cook the Pork

    Preheat your grill or a skillet over medium-high heat. Remove the pork from the marinade and allow excess marinade to drip off. Drizzle olive oil on the grill or skillet and add the pork. Cook for about 15-20 minutes, turning occasionally, until the pork is well browned and cooked through.

    Rest the Pork

    Remove the pork from the heat and let it rest for about 10 minutes. Then chop it into small pieces.

Assembling the Tacos

    Warm the Tortillas

    In a dry skillet, warm the corn tortillas over medium heat for about 30 seconds on each side until pliable.

    Place a portion of the chopped pork on each tortilla. Top with diced pineapple, chopped onion, and cilantro. Serve with lime wedges and salsa if desired.
