Method
Prepare the Tortillas
Cut and Fry Tortillas
Cut the corn tortillas into quarters. In a large skillet, heat oil over medium heat. Fry the tortilla pieces in batches until they are golden brown and crispy, about 2-3 minutes. Remove and drain on paper towels.
Simmer in Salsa
In the same skillet, reduce heat to low and add the red or green salsa. Add the fried tortilla pieces and gently stir to coat the tortillas in the salsa. Allow to simmer for about 5 minutes until heated through.

Combine and Garnish
On a large plate, spoon the salsa-coated tortillas and top with scrambled eggs. Garnish with shredded lettuce, sliced avocado, and a generous serving of pico de gallo.
