Preparation

    Prepare Ingredients

    Rinse and prepare all seafood by peeling shrimp and cutting tilapia into chunks. Slice the zucchini and summer squash. Chop the broccoli and cauliflower into florets.

    Chop Vegetables

    Chop the onion and mince the garlic. Set all prepared ingredients aside.

Cooking

    Sauté Aromatics

    In a large pot, heat olive oil over medium heat. Add chopped onion and sauté until translucent, about 5 minutes. Add minced garlic and sauté for an additional minute until fragrant.

    Add Broth and Vegetables

    Pour in the vegetable broth or fish stock and bring to a simmer. Add the chopped broccoli, cauliflower, zucchini, and summer squash. Allow to simmer for about 10 minutes until vegetables are tender.

    Incorporate Seafood

    Add the shrimp, scallops, and tilapia chunks to the pot. Stir in the canned diced tomatoes along with their juices. Season with oregano, paprika, salt, and pepper. Simmer gently for about 5-7 minutes until the seafood is cooked through and opaque.

    Garnish and Serve

    Taste and adjust seasoning if necessary. Serve hot, garnished with chopped fresh parsley.
