Prepare the Ingredients
Chop the green onions and tomatoes. Drain the mild chiles if using canned. If using chicken, ground beef, or picadillo, ensure they are cooked and shredded or chopped as needed.

Layer the Quesadilla
On one half of each flour tortilla, layer the cheddar cheese, jack cheese, green onions, tomatoes, mild chiles, and your choice of protein evenly.

Grill the Quesadilla
Fold the tortillas in half over the filling. Heat a non-stick skillet over medium heat, and place the folded quesadilla in the skillet. Cook for 3-5 minutes on each side or until the tortillas are golden brown and the cheese has melted.

Serve the Quesadillas
Cut the quesadillas into wedges and serve hot with a side of sour cream and guacamole.
