Method

Prepare the Tortilla

  1. 1

    Heating the Tortilla

In a large skillet over medium heat, lightly toast the flour tortillas for about 1-2 minutes on each side until they are warm and slightly crispy. Remove from heat and set aside.

Layer the Ingredients

  1. 2

    Adding Beans

Spread a layer of refried beans or rancho beans evenly over each tortilla, covering the entire surface.

  2. 3

    Adding Protein

Choose your protein (shredded chicken, ground beef, or picadillo) and evenly distribute it over the layer of beans.

  3. 4

    Adding Cheese

Sprinkle the shredded cheddar and jack cheese generously on top of the protein.

  4. 5

    Adding Vegetables

Add the diced tomatoes and chopped green onions evenly over the cheese layer.

Cooking the Pizza

  1. 6

    Baking the Pizza

Preheat your oven to 400°F (200°C). Place the tortillas on a baking sheet and bake for about 10-12 minutes or until the cheese is melted and bubbly.

Final Touches

  1. 7

    Garnishing

Once out of the oven, remove the pizzas and garnish them with dollops of sour cream and guacamole on top.

  2. 8

    Serving

Cut the pizza into slices and serve hot. Optionally, you can add cooked rice as a side.
