Prepare the Dough

Boil Ingredients
In a medium saucepan, combine 1 cup of water, 2 tablespoons of unsalted butter, 1 tablespoon of granulated sugar, and 1 teaspoon of salt. Bring the mixture to a boil over medium heat.

Add Flour
Once boiling, remove the saucepan from heat and stir in 1 cup of all-purpose flour until the mixture forms a ball.

Cool and Add Eggs
Allow the dough to cool for about 5 minutes. Then, add 2 large eggs one at a time, mixing well after each addition until the dough is smooth and glossy.
Prepare Cinnamon Sugar

Mix Cinnamon Sugar
In a small bowl, combine 1 cup of granulated sugar and 2 tablespoons of ground cinnamon. Set aside.
Fry the Churros

Heat Oil
In a large, deep pot, heat 4 cups of vegetable oil to 350°F (175°C).

Pipe Churros
Transfer the churro dough to a piping bag fitted with a large star tip. Once the oil is hot, carefully pipe the dough into the oil in 6-inch strips. Fry until golden brown, about 2-3 minutes per side.
