Method

Prepare the Filling

  1. 1

    Mix the Filling

In a mixing bowl, combine the shredded cooked chicken, shredded jack cheese, salt, and black pepper. Mix well until all ingredients are evenly distributed.

Assemble the Taquitos

  1. 2

    Fill the Tortillas

Take a flour tortilla and place about 2 tablespoons of the chicken and cheese mixture along one edge of the tortilla. Roll the tortilla tightly around the filling, securing it. Repeat with the remaining tortillas and filling.

Fry the Taquitos

  1. 3

    Heat the Oil

In a large skillet, heat the olive oil over medium heat.

  2. 4

    Fry the Taquitos

Once the oil is hot, place the rolled taquitos seam side down in the skillet. Fry for about 2-3 minutes on each side, or until golden brown and crispy. Remove from the skillet and place on a paper towel-lined plate to drain excess oil.

Garnish and Serve

  1. 5

    Prepare the Garnish

While the taquitos are draining, prepare the garnishes by dicing the tomatoes and grating the parmesan cheese.

  2. 6

    Serve

Place the crispy taquitos on a serving platter, garnish with diced tomatoes and grated parmesan cheese. Serve with sour cream and guacamole on the side.
