Prepare the Chicken
Slice the boneless, skinless chicken breasts into thin strips, about 1/2 inch wide. Place in a mixing bowl and add the fajita seasoning, olive oil, salt, and black pepper. Mix well to coat the chicken evenly. Let marinate for at least 15 minutes, or up to 2 hours in the refrigerator for enhanced flavor.

Slice the Vegetables
While the chicken is marinating, slice the red and green bell peppers and onion into thin strips. Set aside.

Cook the Chicken
Heat a large skillet or cast-iron pan over medium-high heat. Once hot, add the marinated chicken strips and cook for about 5-7 minutes, stirring frequently, until the chicken is cooked through and no longer pink in the center.

Warm the Tortillas
While the chicken and vegetables are cooking, warm the corn and/or flour tortillas in a separate pan over low heat for about 1-2 minutes on each side until soft and pliable.

Assemble the Fajitas
Serve the sizzling chicken and vegetable mixture on a platter. Allow guests to assemble their own fajitas by adding refried beans, Mexican rice, sour cream, guacamole, pico de gallo, and cheese to their warmed tortillas.
