Prepare the Tortillas

Fry the Tortillas
In a large skillet, heat enough oil to cover the bottom of the pan over medium heat. Once hot, add the corn tortillas one at a time and fry until golden brown and crispy, about 1-2 minutes per side. Remove and drain on paper towels.

Cook the Eggs

Scramble or Fry the Eggs
In a separate pan, heat olive oil or butter over medium heat. Crack the eggs into a bowl, add salt and black pepper, and whisk until combined. Pour the eggs into the skillet and cook for 3-4 minutes for scrambled eggs, stirring occasionally. For over-easy eggs, cook for about 2-3 minutes on one side, then gently flip and cook for another 1-2 minutes.
Assemble the Chilaquiles

Plate the Dish
On a large plate, layer the saucy tortillas. Top with scrambled or over-easy eggs, then sprinkle with shredded cheese. Add a dollop of sour cream, followed by the shredded lettuce, slices of avocado, and a generous scoop of pico de gallo.
