Prepare the Filling

Roast the Beetroot

Preheat the oven to 400°F (200°C). Wrap the beetroot in aluminum foil and place on a baking sheet. Roast for 45-60 minutes, or until tender. Let cool, then peel and dice.

Mix the Ingredients

In a large mixing bowl, combine the diced beetroot, black beans, corn, diced red onion, chopped cilantro, lime juice, cumin, salt, and black pepper. Stir well to combine all ingredients evenly.

Prepare the Tortillas

Warm the large flour tortillas in a dry skillet over medium heat for about 30 seconds on each side, or until pliable.

Place a generous scoop of the beetroot filling in the center of each tortilla. Add slices of avocado, and a dollop of sour cream or yogurt. If desired, sprinkle shredded cheese on top.
