Asada Quesadilla Recipe

Fillets of thinly sliced skirt steak charbroiled to perfection on a corn tortilla. Served with cheese, pico de gallo & carne asada.

Preparation of Steak

    Marinate the Steak

    In a bowl, combine the skirt steak with ground cumin, chili powder, black pepper, and salt. Let it marinate for at least 30 minutes to enhance the flavor.

    Charbroil the Steak

    Preheat a grill or grill pan over medium-high heat. Cook the marinated skirt steak for about 4-5 minutes on each side, or until desired doneness is reached. Remove from heat and let it rest for a few minutes before slicing thinly.

Pico de Gallo Preparation

    Mix Ingredients

    In a bowl, combine diced tomatoes, finely chopped onion, chopped cilantro, lime juice, jalapeño (if using), and salt. Mix well and adjust seasoning to taste.

Assembling Quesadilla

    Add Cheese and Steak

    Heat a non-stick skillet over medium heat. Place one corn tortilla in the skillet and sprinkle half of the shredded cheese on one half of the tortilla. Add a portion of the sliced skirt steak over the cheese.

    Fold and Cook

    Fold the tortilla over to cover the filling. Cook for 2-3 minutes on each side, or until the tortilla is golden brown and the cheese is melted.

    Repeat

    Repeat the process with the remaining tortillas and filling.

Serving

    Cut each quesadilla into wedges and serve hot with the prepared pico de gallo on the side.
