Method

Preparing the Steak

  1. 1

    Marinate the Steak

In a bowl, combine olive oil, salt, black pepper, garlic powder, and cumin. Rub the mixture over the skirt steak evenly. Let it marinate for at least 30 minutes.

  2. 2

    Charbroil the Steak

Preheat your grill or a grill pan over medium-high heat. Once hot, place the marinated skirt steak on the grill. Cook for about 4-5 minutes on each side for medium-rare, or until desired doneness is reached.

Preparing the Vegetables

  1. 3

    Prepare Green Onions

Rinse the whole green onions under cold water. Pat dry and set aside.

  2. 4

    Make Guacamole

Cut the avocados in half, remove the pit, and scoop the flesh into a bowl. Mash the avocado with a fork, add lime juice to taste, and season with salt if desired. Mix until creamy.

Serving

  1. 5

    Plate the Dish

Once the steak is cooked, let it rest for a few minutes before slicing it against the grain into thin strips. Serve the steak on a plate alongside the whole green onions and guacamole.

  2. 6

    Choose Your Main

Select one of the main choices: chimichanga, burrito, enchiladas, or chile relleno. Place it on the plate with the steak and vegetables.

  3. 7

    Add Sauces

Drizzle chimichurri sauce over the steak and add a dollop of sour cream to the plate.
