Soufflé and Sauces

Method

Preparation

1

Prepare the White Chocolate Soufflé

Preheat the oven to 190°C (375°F). Grease ramekins with butter and dust with sugar.

2

Melt the Chocolate

In a microwave-safe bowl, melt the white chocolate in increments of 30 seconds until smooth. Let it cool slightly.

3

Mix the Egg Yolks

In a separate bowl, whisk together the egg yolks and granulated sugar until pale and fluffy. Stir in the melted white chocolate and Prosecco.

4

Whip the Egg Whites

In another clean bowl, beat the egg whites with a pinch of salt until soft peaks form. Gently fold the egg whites into the chocolate mixture.

5

Bake the Soufflés

Pour the mixture into the prepared ramekins and place them in the oven. Bake for 15-20 minutes until puffed and golden.

6

Prepare the Raspberry Sauce

In a saucepan, combine raspberries, lemon juice, and powdered sugar. Cook over medium heat until the raspberries break down into a sauce.

7

Make the White Sauce

In another saucepan, melt butter over medium heat, add flour, and whisk for 1 minute. Gradually whisk in milk until smooth and thickened. Stir in vanilla extract and season with salt.

8

Serve

Once the soufflés are baked, remove them from the oven. Serve immediately with raspberry sauce and white sauce drizzled on top.
