Sweet Cheese Filled Pierogi
Make the Dough
In a large bowl, combine flour, egg, salt, and water. Knead until a smooth dough forms. Wrap in plastic wrap and let rest for 30 minutes.
Prepare the Filling
In a bowl, mix ricotta cheese, sugar, and vanilla extract until smooth.
Shape the Pierogi
Roll the dough out on a floured surface to about 1/8 inch thick. Cut into circles. Place a spoonful of filling in the center of each circle, fold over, and press edges to seal.
Cook the Pierogi
Bring a large pot of salted water to a boil. Add the pierogi and cook until they float to the surface, about 3-5 minutes. Remove and drain.
Serve
Serve warm with the potato pancakes.
