Mussels and Sauce

Method

Cooking Mussels

1

Prepare the Mussels

Rinse the mussels under cold water, scrubbing the shells to remove any debris. Discard any mussels that are open and do not close when tapped.

2

Sauté Aromatics

In a large pot, heat the olive oil over medium heat. Add minced garlic and red pepper flakes, sauté for 1-2 minutes until fragrant.

3

Add Tomatoes and Cream

Add the halved cherry tomatoes and cook for 5 minutes until they start to soften. Stir in the heavy cream and bring to a simmer.

4

Cook the Mussels

Add the cleaned mussels to the pot. Cover and cook for 5-7 minutes, or until the mussels have opened. Stir in the chopped spinach until wilted.

5

Finish and Serve

Remove the pot from heat. Stir in the grated Grana Padano cheese and chopped chives. Serve the mussels in bowls, topped with extra cheese and chives.
