Soufflé

    Prepare the soufflé base

    Preheat your oven to 190°C (375°F). Melt dark chocolate and unsalted butter together in a heatproof bowl over simmering water. Stir until smooth and set aside to cool slightly.

    Whisk egg whites

    In a separate bowl, beat the egg whites with a pinch of salt until stiff peaks form.

    Combine mixtures

    In another bowl, whisk the egg yolks, sugar, vanilla extract, and hazelnut meal into the cooled chocolate mixture. Gently fold in the egg whites until just combined.

    Bake the soufflés

    Pour the mixture into greased ramekins and bake for 12-15 minutes until puffed and set. Serve immediately.

Raspberry Sauce

    Prepare the raspberry sauce

    In a saucepan, combine raspberries and sugar over medium heat. Cook until the raspberries break down and the sauce thickens. Add lemon juice and stir well. Strain if desired.

White Sauce

    In a saucepan, melt butter over medium heat. Stir in flour and cook for about 1 minute. Gradually whisk in milk, stirring continuously until the sauce thickens. Season with salt and white pepper.
