In a small saucepan, combine mustard seeds, apple cider vinegar, and sugar. Bring to a simmer over medium heat, then reduce to low and let it cook for about 30 minutes until the seeds are tender. Set aside to cool.

Purple Sweet Potato Puree

Make the Sweet Potato Puree

Peel and cube the purple sweet potatoes. Boil in salted water until tender, about 15 minutes. Drain and return to pot, adding butter and salt. Mash until smooth and creamy.

In a large skillet, cook smoked bacon until crispy. Remove bacon and sauté garlic in the bacon fat. Add collard greens and chicken stock. Cook covered on low heat for about 20 minutes until greens are tender. Crumble bacon back into the skillet.
