Method
Prepare the Ribeye
Caramelize the Onions
Prepare the Peas
Cook the Peas
In a pot of boiling salted water, add frozen peas and cook for 2-3 minutes until tender. Drain and set aside.
Make the Gruyere Cheese Straw
Prepare the Cheese Straw
Roll out the puff pastry and cut it into strips. Sprinkle grated Gruyere cheese on top of each strip, fold over, and twist. Place on a baking sheet, brush with egg wash, and bake at 400°F (200°C) for 15 minutes or until golden brown.
Assemble the Dish
Plate the Dish
Slice the rested ribeye and place it on a plate. Top with sherry caramelized onions, arrange the peas on the side, and garnish with the Gruyere cheese straws.
