Baked Alaska Dark Chocolate Cake
Prepare the Cake Batter
Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans. In a large bowl, sift together flour, sugar, cocoa powder, baking powder, baking soda, and salt. In another bowl, whisk together eggs, milk, oil, and vanilla. Combine the wet ingredients with the dry ingredients, then stir in boiling water until the batter is smooth.
Bake the Cake
Divide the batter evenly between the prepared cake pans. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean. Let the cakes cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
Prepare the Strawberry Ice Cream
While the cakes are cooling, prepare the strawberry ice cream. In a blender, combine 2 cups of fresh strawberries, 1 cup of heavy cream, 1 cup of condensed milk, and a pinch of salt. Blend until smooth. Pour the mixture into a container and freeze for at least 4 hours or until scoopable.
Make the Espresso Meringue
In a clean bowl, beat 4 egg whites until soft peaks form. Gradually add 1 cup of granulated sugar and continue beating until stiff peaks form. Fold in 1 tsp of espresso powder. Set aside.
Assemble the Baked Alaska
Once the cakes are completely cool, place one layer on a serving plate. Spread a generous amount of strawberry ice cream on top, then place the second cake layer on top of the ice cream. Cover the entire cake with whipped espresso meringue.
Bake the Meringue
Preheat the oven to 450°F (232°C). Place the assembled cake in the oven for 3-5 minutes or until the meringue is golden brown. Keep a close eye to prevent burning.
