Chicken Marinade

Marinate the Chicken
In a large bowl, combine buttermilk, hot sauce, salt, and black pepper. Add the chicken thighs and ensure they are fully submerged. Cover and refrigerate for at least 2 hours, or overnight for best results.

Prepare the Breading
In a separate bowl, mix together the flour, cornstarch, paprika, garlic powder, onion powder, salt, and black pepper. Set aside.

Heat the Oil
In a large, deep skillet, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Bread the Chicken
Remove chicken from the marinade, allowing excess buttermilk to drip off. Dredge each piece in the flour mixture, ensuring they are thoroughly coated. Shake off any excess flour.

Fry the Chicken
Carefully place the breaded chicken thighs into the hot oil. Fry for about 5-7 minutes per side, or until golden brown and cooked through (internal temperature should reach 165°F or 74°C).

Use a slotted spoon to remove the chicken from the oil and place on a wire rack or paper towels to drain excess oil.

In a small bowl, mix together mayonnaise, hot sauce, and garlic powder until well combined. Set aside.
Slaw

Prepare the Slaw
In a large bowl, combine shredded cabbage and grated carrot. In a separate bowl, mix together mayonnaise, apple cider vinegar, salt, and black pepper. Pour the dressing over the cabbage mixture and toss until evenly coated.

To assemble, spread a generous amount of spicy mayo on the bottom half of each brioche bun. Place a piece of fried chicken on top, followed by a scoop of slaw, pickles, and cilantro if desired. Cover with the top half of the bun and serve immediately.
