Prepare the Sushi Rice

Rinse the sushi rice under cold water until the water runs clear. Cook the rice according to package instructions. Once cooked, transfer to a bowl and mix with rice vinegar, sugar, and salt. Allow to cool.

Slice the Fillings

Thinly slice cucumber and avocado. Cut the tuna and salmon into long strips. If using shrimp, mix with togarashi spice.

Assemble the Hosomaki

Place a nori sheet on a bamboo sushi mat, shiny side down. Wet your hands and spread a thin layer of sushi rice over the nori, leaving a 1-inch border at the top. Place your chosen filling (cucumber, avocado, tuna, salmon, or shrimp) in a line across the rice.

Roll the Sushi

Using the mat, carefully roll the sushi away from you, applying gentle pressure to form a tight roll. Seal the edge of the nori with a little water.

Slice the Hosomaki

Using a sharp knife, slice the roll into 8 equal pieces. Clean the knife between cuts to ensure clean edges.

Serve

Arrange the hosomaki on a plate and serve with soy sauce, pickled ginger, and wasabi if desired.
