Cook the Rice
While the grits are cooking, prepare the rice according to package instructions (generally, combine 1 cup of rice with 2 cups of water, bring to a boil, then simmer until cooked, about 18-20 minutes).

Make the Étouffée
In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add diced bell pepper, celery, and minced garlic, sautéing until softened (about 5 minutes). Stir in 1 cup of diced tomatoes, 2 tablespoons of Cajun seasoning, and the crawfish tails. Cook for an additional 5-10 minutes until heated through.

Serve
To serve, spoon a generous portion of grits onto plates, top with crawfish étouffée, and arrange shrimp on the side. Garnish with chopped green onions.
