Directions for Crawfish Étouffée Baked Potato

    Prepare the Baked Potatoes

    Preheat the oven to 400°F (200°C). Scrub the potatoes, pierce them several times with a fork, and rub with olive oil and salt. Bake directly on the oven rack for about 45-60 minutes until tender.

    Make the Crawfish Étouffée

    In a large skillet, melt the butter over medium heat. Add the onion, bell pepper, and celery (the 'holy trinity') and sauté until softened, about 5-7 minutes. Stir in the garlic and cook for an additional minute.

    Add Crawfish and Seasonings

    Add the Cajun seasoning, tomato sauce, and chicken broth to the skillet. Bring to a simmer, then stir in the crawfish. Cook for about 10 minutes, stirring occasionally, until heated through. Season with salt and black pepper to taste.

    Prepare the Shrimp

    While the étouffée simmers, in another pan, sauté the shrimp in a little butter over medium heat for about 3-4 minutes, or until they turn pink and opaque. Season with salt and pepper.

    Assemble the Baked Potatoes

    Once the potatoes are done, remove them from the oven and let cool slightly. Cut a slit down the center of each potato and fluff the inside with a fork. Sprinkle with Cheddar Jack cheese, then spoon in the crawfish étouffée generously.

    Top with Shrimp and Chives

    Top each loaded potato with 4 sautéed shrimp and a sprinkle of fresh chives. Serve immediately and enjoy!
