    Prepare the Potatoes

    Preheat the oven to 400°F (200°C). Wash the potatoes thoroughly and pierce them several times with a fork. Place them on a baking sheet and bake for about 45-60 minutes, or until tender.

    Mix the Toppings

    In a bowl, combine the butter, shredded cheddar cheese, sour cream, sliced jalapenos, crumbled bacon, chopped chives, salt, and black pepper. Mix well until all ingredients are combined.

    Assemble the Potatoes

    Once the potatoes are done baking, remove them from the oven. Cut a slit down the center of each potato and gently squeeze the ends to open them up. Fill each potato with the topping mixture.

    Final Bake

    Return the stuffed potatoes to the oven and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.

    Serve

    Remove from the oven and let cool slightly. Garnish with additional chives if desired, and serve hot.
