    Bake the Potatoes

    Preheat your oven to 425°F (220°C). Wash the baking potatoes thoroughly, pierce them several times with a fork, and rub with a little olive oil and salt. Place them directly on the oven rack and bake for about 45-60 minutes, or until tender.

    Cook the Shrimp

    While the potatoes are baking, heat 2 tablespoons of butter in a skillet over medium heat. Add the Gulf shrimp and season with salt and pepper. Cook for about 2-3 minutes on each side until they are pink and opaque. Remove from heat and set aside.

    Prepare the Toppings

    In a small bowl, combine the sour cream, chopped chives, and some crumbled bacon. Set aside. Prepare the shredded cheese, jalapenos, and any additional toppings you desire.

    Assemble the Loaded Potatoes

    Once the potatoes are baked, remove them from the oven and let them cool slightly. Cut a slit in the top of each potato and gently squeeze the ends to open them. Add a tablespoon of butter to each potato, followed by the cooked shrimp, sour cream mixture, shredded cheese, jalapenos, and crumbled bacon.

    Garnish with additional chives and serve immediately while hot.
