Prepare the Seafood
Season the fish fillets and shrimp with salt, black pepper, and Old Bay seasoning. Let it marinate for 15 minutes.

Fry the Seafood
In a large skillet, heat oil over medium-high heat. Once hot, add the fish fillets and cook for about 3-4 minutes on each side until golden brown. Remove and place on paper towels to drain excess oil. Next, add the shrimp and fry for 2-3 minutes until pink and cooked through.

Assemble the Po'boy
Slice the Gambino's French bread lengthwise, leaving one side hinged. Spread mayonnaise on the inside of the bread, then layer with lettuce, tomato slices, pickles, fried fish, and shrimp.

Serve
Serve the Po'boy with a side of French fries. Enjoy!
