Po'boy Sandwich

Prepare the Fish
Season the fish fillets with salt, black pepper, and cayenne pepper. Let them marinate for about 15 minutes.

Fry the Fish
Heat oil in a deep frying pan over medium-high heat. Once hot, carefully place the fish fillets in the oil and fry until golden brown on both sides, about 3-4 minutes per side. Remove and place on a paper towel to drain excess oil.

Prepare the Bread
Slice the French bread loaf in half lengthwise but not all the way through. Lightly toast the inside if desired.

Assemble the Po'boy
Spread mayonnaise on both sides of the bread. Layer with lettuce, tomato slices, fried fish fillets, and pickles.

Serve
Close the sandwich and serve immediately with fries on the side.
