    In a large pot, heat the butter and vegetable oil over medium heat. Add the diced onion, green bell pepper, and celery (the 'holy trinity' of Cajun cooking) and sauté until soft, about 5-7 minutes.

    Stir in the minced garlic and cook for an additional minute. Sprinkle in the flour and stir continuously until it is well blended and begins to brown slightly, about 3-4 minutes.

    Combine Ingredients

    Gradually add the chicken broth while stirring to avoid lumps. Bring to a simmer.

    Season the Mixture

    Add the crawfish tails, cayenne pepper, paprika, salt, and black pepper. Stir to combine and let it simmer for about 15-20 minutes, stirring occasionally.

    Once the sauce has thickened and crawfish is heated through, stir in the chopped green onions. Serve the crawfish étouffée over cooked white rice.
