In a large skillet, melt the butter over medium heat. Add the diced onion, green bell pepper, and celery. Sauté until soft, about 5 minutes.

Stir in the minced garlic and cook for another minute. Sprinkle in the flour and stir constantly for about 2-3 minutes until it turns a light golden color.

Incorporate Broth and Seasoning
Slowly add the chicken broth while stirring. Add the crawfish tails, tomato paste, Cajun seasoning, salt, and black pepper. Bring to a simmer and cook for 15 minutes, stirring occasionally.

Once the étouffée has thickened, spoon it over cooked white rice. Top with the cooked shrimp, green onions, and parsley. Serve hot.
