Prepare the Tomato Confitura
Start by blanching the ripe tomatoes in boiling water for 30 seconds. Transfer them to an ice bath to cool. Once cooled, peel the tomatoes and chop them finely. In a saucepan, combine the chopped tomatoes, 2 tablespoons of olive oil, salt, and black pepper. Cook over medium heat for about 20 minutes until the mixture thickens and resembles a confitura.

Prepare the Bread
While the tomato confitura is cooking, preheat your oven to 400°F (200°C). Slice the Cristal bread into thick slices and place them on a baking sheet. Drizzle the remaining tablespoon of olive oil over the slices and toast in the oven for about 5-7 minutes until golden brown.

Finish the Dish
Once the bread is toasted, remove it from the oven and rub the garlic cloves on each slice for extra flavor. Spoon the tomato confitura generously over the toasted bread slices. Garnish with fresh basil leaves and a sprinkle of black pepper.
