Cooking Quail Eggs

    Soft Boil the Eggs

    Bring a pot of water to a gentle boil. Carefully add the quail eggs and boil for about 2-3 minutes for a soft-boiled consistency. Remove the eggs and place them in an ice bath to stop the cooking process.

Pickling Mustard Seeds

    Prepare Pickled Mustard Seeds

    In a small saucepan, combine mustard seeds, white vinegar, sugar, and salt. Bring to a simmer and cook for 10-15 minutes until the mustard seeds are tender and the liquid has thickened slightly. Remove from heat and let cool.

    Assemble the Dish

    Peel the quail eggs carefully. Place them on a serving plate, top with pickled mustard seeds, and garnish with thinly sliced Jamon Serrano. Sprinkle with Espelette pepper to taste.
