Preparation
1. Fry the Potatoes
In a large pan, heat 2 tablespoons of olive oil over medium heat. Add the diced potatoes, season with salt and pepper, and cook until golden and crispy, about 15-20 minutes. Remove from the pan and set aside.
2. Cook the Chorizo
In the same pan, add the diced chorizo and cook until browned and crispy, about 5 minutes. Remove and set aside with the potatoes.
3. Prepare the Garlic Chips
Add the sliced garlic to the pan and fry until golden brown. Remove and drain on a paper towel.
4. Cook the Shrimp
Add a tablespoon of olive oil to the pan and add the shrimp. Cook for 2-3 minutes until they turn pink and are cooked through. Set aside.
Assembling
5. Fry the Eggs
In the same pan, add a little more olive oil if needed and crack the eggs in, cooking them sunny side up until the whites are set but yolks are still runny, about 3-4 minutes.
6. Plate the Dish
On a large plate, arrange the crispy potatoes as the base. Top with the cooked shrimp, chorizo, and the fried eggs. Garnish with garlic chips, pine nuts, and the dried chili de arbol.
7. Serve
Drizzle with olive oil and season with additional salt and pepper to taste. Serve immediately while hot.
