Preparation

    Prepare the Moorish Pepper Oil

    In a small saucepan, combine olive oil, smoked paprika, cayenne pepper, minced garlic, and chopped parsley. Heat over low heat for about 10 minutes to infuse the flavors. Remove from heat and let cool.

    Season the Steak

    Generously season both sides of the tomahawk ribeye steak with salt and black pepper. Let the steak sit at room temperature for about 30 minutes before grilling.

Grilling

    Grill the Steak

    Preheat your grill over high heat. Once hot, place the steak on the grill and cook for about 4-5 minutes on each side for medium-rare, or until desired doneness. Use a meat thermometer to check the internal temperature (130°F for medium-rare).

    Char the Scallions

    In the last few minutes of grilling the steak, brush the scallions with olive oil and place them on the grill. Cook for about 2-3 minutes until they are charred and tender.

Serving

    Serve

    Remove the steak from the grill and let it rest for 10 minutes. Slice the steak and serve it drizzled with the Moorish pepper oil and alongside the charred scallions.
