Make the Brioche

    Prepare the Dough

    In a bowl, combine the flour, sugar, and salt. In a separate bowl, mix the yeast with warm milk and let it sit for 5 minutes. Then, combine the yeast mixture with the flour mixture, adding the eggs and melted butter. Knead until smooth.

    Let it Rise

    Cover the dough and let it rise in a warm place for about 1 hour or until doubled in size.

    Shape and Bake

    Punch down the dough, shape into loaves or rolls, and place them on a baking tray. Let them rise again for about 30 minutes. Preheat the oven to 350°F (175°C) and bake for 20-25 minutes until golden brown.

Prepare the Filling

    Roast the Eggplant

    Slice the eggplant into rounds, brush with olive oil, and season with salt and pepper. Roast in the oven at 400°F (200°C) for about 25-30 minutes until tender and golden.

    Assemble the Bocadillo

    Slice the brioche and layer the roasted eggplant, Caña de Cabra cheese, a drizzle of truffle honey, and a spoonful of quince conserva on one slice. Top with another slice of brioche.

    Grill

    Heat a skillet over medium heat and grill the bocadillo on both sides until golden and the cheese melts slightly.
