    In a medium bowl, combine the mixed olives, ensuring they are well-distributed.

    In a separate bowl, whisk together the olive oil, chopped rosemary, chopped thyme, fennel pollen, lemon zest, orange zest, crushed garlic cloves, and red pepper flakes. Season with salt and black pepper to taste.

    Pour the marinade over the olives, making sure they are fully coated. Stir gently to mix.

    Cover the bowl with plastic wrap and let it sit at room temperature for at least 30 minutes. For best flavor, marinate for up to 2 hours.
