1. Boil the Pasta
In a large pot, bring salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the spaghetti.

2. Cook the Pancetta
In a large skillet over medium heat, add the pancetta. Cook until it becomes crispy, about 5-7 minutes. Remove from heat and let it cool slightly.
3. Prepare the Sauce Mixture
In a bowl, whisk together the eggs and grated Parmesan cheese until well combined. Season with black pepper and a pinch of salt.

4. Combine Pasta and Pancetta
Add the drained spaghetti to the skillet with pancetta, mixing well to combine. If the skillet is too dry, add a bit of the reserved pasta water.
5. Add the Sauce
Remove the skillet from the heat. Quickly pour the egg and cheese mixture over the pasta, tossing continuously to create a creamy sauce. If needed, add more reserved pasta water to reach desired creaminess.
6. Season to Taste
Taste and adjust seasoning with additional salt and black pepper, if necessary.

7. Serve
Plate the spaghetti carbonara and garnish with chopped parsley. Serve immediately with extra Parmesan cheese on the side.
