    Prepare the Tofu

    Press the diced tofu to remove excess moisture. Cut into cubes and set aside.

    Chop the Vegetables

    Wash and chop all seasonal vegetables into bite-sized pieces.

Cooking

    Stir-fry Tofu

    In a large skillet or wok, heat 1 tablespoon of sesame oil over medium-high heat. Add the tofu and stir-fry until golden brown (about 5-7 minutes). Remove tofu and set aside.

    Cook the Vegetables

    In the same skillet, add the remaining sesame oil. Add the bell peppers, broccoli, carrots, snap peas, and zucchini. Stir-fry for about 5-7 minutes until they are tender but still crisp.

    Make the Sauce

    In a small bowl, whisk together soy sauce, garlic, ginger, cornstarch, and water until smooth.

    Combine Everything

    Return the tofu to the skillet with the vegetables. Pour the sauce over and stir gently to combine. Cook for an additional 2-3 minutes until the sauce thickens.

Serving

    Garnish and Serve

    Remove from heat, sprinkle with sesame seeds and chopped green onions. Serve hot over rice or noodles.
