Prepare the Fruit
Preheat your oven to 350°F (175°C). Wash and slice the peaches and cherries, removing pits as needed.

Thicken the Filling
In a small bowl, mix the cornstarch with a couple of tablespoons of water to create a slurry. Add this to the fruit mixture, stirring until it thickens. Remove from heat and set aside.

Prepare the Crumble Topping
In a mixing bowl, combine the all-purpose flour, rolled oats, brown sugar, and salt. Add the cold butter, cut into small cubes, and mix until the mixture resembles coarse crumbs.

Prepare the Apple Chips
Thinly slice the apples and remove the seeds. Lay them on a baking sheet lined with parchment paper. Sprinkle with cinnamon and sugar.

Bake the Apple Chips
Bake in the same oven at 350°F (175°C) for 15-20 minutes, flipping halfway through, until crispy.

Assemble the Crumble
In a greased baking dish, pour the mulled fruit mixture evenly. Sprinkle the crumble topping over the fruit.
