Method

Pudding Preparation

  1. 1

    Prepare Dates

In a bowl, combine the pitted medjool dates and boiling water. Let them soak for about 15 minutes until they soften.

  2. 2

    Blend the Mixture

After soaking, transfer the dates and water to a blender. Add baking soda and blend until smooth.

  3. 3

    Mix Dry Ingredients

In a separate bowl, whisk together all-purpose flour, brown sugar, baking powder, and salt.

  4. 4

    Combine Ingredients

In a large bowl, cream together the unsalted butter and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla extract.

  5. 5

    Add Wet Ingredients

Slowly add the blended date mixture to the butter mixture, mixing until just combined.

  6. 6

    Add Dry Ingredients

Fold in the dry ingredients gently until no streaks of flour remain, being careful not to overmix.

  7. 7

    Bake Pudding

Pour the mixture into a greased baking dish and bake at 180°C (350°F) for 30-35 minutes or until a skewer comes out clean.

Toffee Sauce Preparation

  1. 8

    Combine Ingredients

In a saucepan over medium heat, combine the brown sugar, heavy cream, unsalted butter, and vanilla extract.

  2. 9

    Cook the Sauce

Bring to a gentle boil, stirring continuously until the sugar is dissolved and the mixture thickens slightly, about 5-7 minutes.

Oat Crumble Preparation

  1. 10

    Mix Dry Ingredients

In a bowl, combine rolled oats, all-purpose flour, brown sugar, and salt.

  2. 11

    Add Butter

Melt the unsalted butter and pour it over the oat mixture. Stir until crumbly.

  3. 12

    Bake Crumble

Spread the crumble mixture onto a baking sheet and bake at 180°C (350°F) for 15-20 minutes or until golden brown.

Candied Pecans Preparation

  1. 13

    Prepare the Mixture

In a saucepan, combine pecan halves, brown sugar, water, cinnamon, and salt.

  2. 14

    Cook the Pecans

Cook over medium heat, stirring frequently until the sugar dissolves and the pecans are coated, about 5-7 minutes.

  3. 15

    Cool the Pecans

Spread the candied pecans on parchment paper to cool completely.
