Pudding Preparation

In a bowl, combine the pitted medjool dates and boiling water. Let them soak for about 15 minutes until they soften.

After soaking, transfer the dates and water to a blender. Add baking soda and blend until smooth.

In a separate bowl, whisk together all-purpose flour, brown sugar, baking powder, and salt.

In a large bowl, cream together the unsalted butter and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla extract.
