Prepare the Beef
Using a sharp knife, finely chop the beef tenderloin into small pieces. Aim for a uniform chop to ensure even texture.

Mix Ingredients
In a mixing bowl, combine the chopped beef tenderloin with Dijon mustard, prepared horseradish, chopped parsley, chives, tarragon, salt, black pepper, chopped capers, olive oil, and lemon juice. Stir gently to combine all ingredients.

Add Egg Yolk
Create a small well in the center of the meat mixture and carefully place the egg yolk into the well. This will add richness and help bind the tartare.

Plate the Tartare
Using a ring mold or a spoon, carefully shape the tartare into a mound on a chilled plate.

Garnish and Serve
Garnish the tartare with additional chopped herbs if desired. Serve immediately with toasted bread or crackers on the side.
