Select Fresh Oysters
Choose a dozen fresh oysters from the market. Look for oysters that are tightly closed and feel heavy for their size.

Chill the Oysters
Fill a shallow plate or platter with crushed ice. Arrange the oysters on the ice to keep them chilled until serving.

Shuck the Oysters
Using an oyster knife, shuck each oyster carefully, ensuring to keep the juices intact. Discard the top shell and leave the oyster in the bottom shell.
Mignonette Sauce Preparation

Mix the Ingredients
In a small bowl, combine the red wine vinegar, finely chopped shallots, crushed black peppercorns, and chopped fresh herbs.

Allow the mignonette sauce to sit for at least 15 minutes to let the flavors meld together.
Serving

Place the shucked oysters back on the ice and serve with the mignonette sauce on the side for drizzling.
