Method

Crust Preparation

    Prepare the Crust

    Preheat the oven to 350°F (175°C). In a mixing bowl, combine graham cracker crumbs, melted butter, and sugar. Mix until well combined.

    Form the Crust

    Press the mixture firmly into the bottom of a 9-inch springform pan to form an even layer. Bake for 8-10 minutes until lightly golden. Remove from oven and let cool.

Cheesecake Filling Preparation

    Mix the Filling

    In a large bowl, mix the mascarpone cheese, cream cheese, sugar, and vanilla extract until smooth and creamy. Avoid overmixing.

    Add Eggs

    Add the eggs one at a time, mixing gently after each addition until just combined.

    Bake the Cheesecake

    Pour the filling into the cooled crust. Bake at 325°F (160°C) for 50-60 minutes, or until the center is set but still slightly jiggly. Turn off the oven and let it cool in the oven with the door ajar for 1 hour.

    Remove the cheesecake from the oven and refrigerate for at least 4 hours or overnight before serving.

Blackberry Coulis Preparation

    In a saucepan over medium heat, combine blackberries, sugar, and lemon juice. Cook for about 10-15 minutes, stirring occasionally until the blackberries break down and the mixture thickens.

    Blend the mixture until smooth, then strain through a fine mesh sieve to remove seeds. Set aside to cool.

Blood Orange Gastrique Preparation

    In a saucepan, combine blood orange juice and sugar. Bring to a boil, then reduce heat and simmer for 10-15 minutes until it thickens to a syrupy consistency. Let cool.

Candied Hazelnuts Preparation

    Candy the Hazelnuts

    In a saucepan, combine hazelnuts, sugar, and water. Cook over medium heat, stirring constantly until the sugar dissolves and the mixture starts to caramelize. Continue cooking until the hazelnuts are coated and golden brown.

    Cool and Chop

    Spread the candied hazelnuts on a parchment-lined baking sheet to cool before chopping coarsely.
