Prepare the Potatoes
Preheat your oven to 425°F (220°C). Wash the russet potatoes thoroughly and pat them dry. Cut each potato into bite-sized cubes.

Season the Potatoes
In a large bowl, toss the potato cubes with olive oil, salt, and black pepper until evenly coated.

Bake the Potatoes
Spread the seasoned potatoes in a single layer on a baking sheet. Bake in the preheated oven for about 25-30 minutes or until golden brown and crispy, flipping halfway through.
Assembly

Layer the Ingredients
Once the potatoes are done, remove them from the oven and place them on a serving platter. Spoon the pork green chili evenly over the potatoes.

Add the Smoky Queso
Drizzle the smoky queso over the top of the chili-covered potatoes.

Top with Pickled Chilis and Onions
Add the pickled chilis and pickled onions on top of the queso layer.

Finish with Cheese and Herbs
Sprinkle cotija cheese, chopped cilantro, and scallions over the top. Serve immediately while hot.
