Method

Preparing the Salmon

  1. 1

    Marinate the Salmon

In a bowl, combine olive oil, lemon juice, minced garlic, salt, and black pepper. Place the salmon fillets in the marinade, ensuring they are well coated. Cover and let marinate in the refrigerator for at least 30 minutes.

  2. 2

    Preheat the Grill

Preheat your grill to medium-high heat (about 400°F or 200°C).

Grilling the Salmon

  1. 3

    Grill the Salmon

Remove the salmon from the marinade and discard the marinade. Place the salmon fillets skin-side down on the grill. Grill for about 6-8 minutes on each side, or until the salmon is cooked through and flakes easily with a fork.

Preparing the Vegetables

  1. 4

    Prepare the Vegetables

While the salmon is marinating, wash and cut the asparagus, bell peppers, and zucchini into bite-sized pieces.

  2. 5

    Season the Vegetables

In a bowl, toss the chopped vegetables with olive oil, salt, and black pepper until evenly coated.

Grilling the Vegetables

  1. 6

    Grill the Vegetables

Once the salmon is done, place the seasoned vegetables on the grill. Grill for about 5-7 minutes, turning occasionally, until they are tender and slightly charred.

Serving

  1. 7

    Serve the Dish

Remove the grilled salmon and vegetables from the grill. Plate the salmon alongside the grilled vegetables. Optionally, drizzle with additional lemon juice and serve immediately.
