Preparing the Patatas

Season and Bake
Toss the potato wedges with olive oil and salt. Spread them out on a baking sheet and bake at 425°F (220°C) for about 25-30 minutes, flipping halfway through until crispy.
Making the Aioli

Combine Ingredients
In a small bowl, combine mayonnaise, minced garlic, lemon juice, and salt. Mix well and set aside in the refrigerator until ready to serve.
Preparing the Burger

Form the Patties
Divide the ground beef into four equal portions and gently form them into balls. Do not overwork the meat.

Add Cheese
Flip the patties, top each with a slice of American cheese, and cook for an additional 2-3 minutes until the cheese is melted.

Prepare the Brioche Buns
Toast the brioche buns on the grill until golden brown.
Assembling the Burger

Build the Burger
On the bottom half of each toasted brioche bun, layer the shredded lettuce, cooked patties with melted cheese, dill pickles, and tobacco fried onions. Drizzle with peppercorn sauce.

Finish and Serve
Top with the other half of the brioche bun. Serve the burgers with crispy patatas and aioli on the side.
