Method

Crust

  1. 1

    Prepare the crust

Preheat your oven to 350°F (175°C). In a medium bowl, combine graham cracker crumbs, granulated sugar, and salt. Melt the unsalted butter and mix it into the crumb mixture until evenly combined.

  2. 2

    Form the crust

Press the crumb mixture firmly into the bottom of a 9-inch springform pan, making sure to create an even layer. Bake for 10 minutes, then remove from the oven and let it cool while you prepare the filling.

Filling

  1. 3

    Prepare the filling

In a large mixing bowl, beat the cream cheese until smooth and creamy. Gradually add the granulated sugar and continue to beat until well combined.

  2. 4

    Incorporate other ingredients

Add the sour cream, vanilla extract, and flour to the cream cheese mixture. Mix until fully incorporated. Make sure to scrape down the sides of the bowl to ensure everything is well mixed.

  3. 5

    Add eggs

Add the eggs one at a time, mixing on low speed after each addition until just combined. Do not overmix at this stage.

  4. 6

    Bake the cheesecake

Pour the filling into the cooled crust. Bake in the preheated oven for 55-60 minutes, or until the center is set but still slightly jiggly. Turn off the oven and crack the door, allowing the cheesecake to cool in the oven for 1 hour.

  5. 7

    Cool and refrigerate

Remove the cheesecake from the oven and let it cool to room temperature. Once cooled, refrigerate for at least 4 hours, preferably overnight, before serving.
