Calamari Preparation

    Prepare the Calamari

    Clean the calamari by removing the head, innards, and skin. Rinse well under cold water and slice the body into rings.

    Make the Batter

    In a mixing bowl, combine the flour, cornstarch, salt, black pepper, and cayenne pepper. In another bowl, whisk together the eggs and milk until smooth.

    Coat the Calamari

    Dip the calamari rings into the egg mixture, allowing excess to drip off. Then, dredge them in the flour mixture until well coated.

    Heat the Oil

    In a deep skillet or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Fry the Calamari

    Fry the calamari in batches, being careful not to overcrowd the pan. Cook for about 2-3 minutes, or until golden brown. Remove and drain on paper towels.

Marinara Sauce Preparation

    Sauté the Garlic

    In a saucepan, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.

    Add Tomatoes and Seasonings

    Stir in the crushed tomatoes, oregano, salt, black pepper, and sugar. Bring to a simmer.

    Simmer the Sauce

    Let the sauce simmer for about 15-20 minutes, stirring occasionally, until it thickens slightly.

    Add Fresh Basil

    Stir in the chopped fresh basil just before serving.
