Cornmeal Buttermilk Biscuits

Prepare the Biscuits
Stir in the buttermilk until just combined. Do not overmix.

Shape the Biscuits
Turn the dough out onto a floured surface and gently pat it into a rectangle about 1-inch thick. Cut out biscuits using a cutter or glass and place them on a baking sheet.

Bake the Biscuits
Bake for 12-15 minutes or until golden brown. Remove from oven and let cool slightly before serving.
Fennel-Pollen Crackers

Prepare the Dough
In a bowl, combine the flour, fennel pollen, and sea salt. Add the olive oil and water, mixing until a dough forms.

Roll and Cut the Crackers
Roll out the dough on a floured surface to about 1/8-inch thick. Cut into desired shapes and place on a baking sheet.

Bake the Crackers
Bake at 350°F (175°C) for about 15-20 minutes until golden and crisp. Let cool before serving.
Focaccia

Prepare the Dough
In a large bowl, mix warm water and yeast. Let it sit for about 5 minutes until foamy. Add flour, salt, and olive oil, mixing until a dough forms.

Knead and Rise
Knead the dough on a floured surface for about 5 minutes. Place in a greased bowl, cover, and let rise until doubled in size, about 1 hour.

Shape and Top the Focaccia
Preheat oven to 425°F (220°C). Press the risen dough into a greased baking pan. Dimple the surface and sprinkle with fresh thyme.

Bake the Focaccia
Drizzle with olive oil and bake for about 20-25 minutes until golden brown. Let cool slightly before serving.
Honey, Lemon, & Thyme Butter

Make the Butter
In a bowl, beat the softened butter until creamy. Gradually mix in honey, lemon zest, and thyme leaves until well combined.

Chill Before Serving
Transfer the butter to a serving dish or wrap in parchment paper. Chill until firm before serving.

Cook the Preserves
Cook over medium heat, stirring often, until the mixture thickens, about 20-25 minutes.

Let the preserves cool completely before transferring to jars for storage.
